While there’s nothing fancy or involved about a potato salad recipe, I just wanted to post this one bc I’ve used it a bunch of times, and it’s super-good.  Really good.  YUM.  If you don’t already have a recipe that you use and like, definitely give this one a try!

Anyway, peel, chop, and boil 5(ish) potatoes- mine were small, so I did 7 this time (just add a teeny bit more mayo later).  Next, hardboil three eggs.

While those are cooking, work on the “mix”- the mayo, vinegar, seasonings, celery, and onion.  Then, when cooled, add in the potatoes and peeled, chopped eggs.  Mix well- and, voila!

Delicious potato salad! 🙂
