Yum.  The title alone says it all, really- yum!

This is the first recipe that I’m making from EatingWell.com, and here’s hoping it’s good!  I really wanna add more fish/seafood to our weekly meals, and also anything that includes shrimp and scallops immediately has my vote!

However, that said- this recipe was one I’d been thinking about using for a few weeks, but hadn’t bc it’s a pricey venture.  For instance, for this recipe, you’ll need to buy shrimp, scallops, and saffron.  I ended up buying them over three weeks- one week, frozen shrimp, another week, the saffron ($15, yikes!), and today, the scallops.  So, this had better be delicious! 😉

Start by sauteeing the onion w/the oil and herbs, then the diced tomatoes and broth:

Then, add in the scallops- I chopped ours in half bc they were HUGE:

Next up, the shrimp and couscous:

Cover and leave it for about 5 minutes, enough time for the couscous to absorb all the “juice,”…fluff, and serve!


This is really tasty, but I would probably cut back on the fennel seed some…it’s a tad overpowering.  Still, yum! 🙂


Oh, quick note on the saffron- I’ve never used this before (obviously), and had no idea what it even looked like.  Imagine my surprise when I found this:

The bag is inside a regular spice container, and inside the little black bag are the saffron threads:

Weird! 🙂
