Ok, I can’t stay away! I tried to take a break, but I can’t do it! 😉 So…while I might not be posting as regularly as I used to, I’m definitely still cooking- might as well post about it!
I got this one from This Week for Dinner (love!), and I just liked how easy it seemed. And how delicious it sounded- who doesn’t like stuffed shells?
I made the “stuffing” ahead of time, and it’s chilling in the fridge. I think that’s the key to cooking for me now- I really have to plan ahead. Having two little kids and a newborn doesn’t really allow me the time to just wing it anymore- I have to plan out my moves! 😉 Anyway, the filler for the shells is ricotta cheese, some mashed garlic cloves, chopped fresh basil, salt, pepper, and an egg.
Oh, I didn’t really use that many garlic cloves- probably about three, but I just liked how these looked for the picture!
Next up- boiling the shells. I’m not making as many as the recipe suggests, mainly bc I don’t wanna be eating stuffed shells forever- which I would, since I’m the one that’s home all day! I’ll probably just use about 10-15, and will have some leftover for lunch.
Once they’re cooked, it’s stuffing time- kinda fun! Use about 1 T. of the mix per shell, add them to a baking dish, and cover w/sauce. I’m adding in some of the slow-roasted tomatoes from earlier bc…well, why not? Then, sprinkle w/mozzarella cheese and bake (at 350) for 25-30 minutes.
When I was assembling these, I had the line from “Pretty Woman” going through my head, from the part in the restaurant w/the snails…”slippery little suckers.” These little shells are crazy-slippery, and hard to hang on to to stuff! 😉

Well, I forgot to take a picture when it was finished, so you’ll just have to imagine a pan of these, rather than the two on this plate! 😉
As always, Jane’s recipe was super-good, and E and I ate way more than we should have. Yum- definitely a recommended recipe, and something I’ll plan to make again. It’s seriously just too yummy (and easy) not to make again!

I made these a few days ago. I had a lot of fun making them and they were sooo good! I followed exactly how you made them except I had to use powdered garlic because the garlic cloves i had had gone bad! Wierd.. I didn’t know garlic could go bad, anyways I did have fresh basil and some cherry tomatoes. They REALLY gave them a yummy fresh taste.
