I couldn’t wait to make this tonight- although, due to a lack of energy, I wish I could just do the eating part of this, rather than the whole cooking bit! 😉

However, I’m pushing through w/a cup of coffee, and really, this shouldn’t take too long to make- then, on to the eating!

This is another recipe from Yummly.com, and their recipes usually aren’t too involved, which is perfect.

So, first up:  the chicken and spices.  I think that you’re supposed to put everything in the oven, in a skillet, but since I don’t have an oven safe skillet (another future investment, perhaps), I’m planning to cook the chicken on the stove.  Should be fine.  Oh, I also just realized that I hadn’t bought the coriander- I checked the “substitutions” section on the recipe, and a little list popped up under the coriander w/possible subs; I used turmeric instead, so we’ll see how that goes.

Then, add the beans, and mix and mash:

Now, they go into the oven for about 15 minutes to bake:


All done!  They look sooo good!  Maybe that’s the hunger talking, who knows, but I think they look delicious.  The flavors are really nice, the spices aren’t too strong (the turmeric worked out), and the tortillas are good and crunchy.  Or, a bit burnt, in my case!  (Oops!)

I’m serving ours w/salsa like a dipping sauce- yum!

Anyway, on to the eating! 🙂
