This is one of the latest things that my kids are willing to try:  chicken nuggets.  They don’t eat them consistently all the time, but most of the time, they do (they’re so picky, sheesh!).  Anyway, after eating one of their leftover fast-food nugget the other day, I decided that they are the grossest thing I’ve ever seen/eaten!  It doesn’t even resemble chicken when you bite into it!  Poor kids…

So, I decided to make my own, and hopefully, they’ll like ’em- or, this has just been a huge fail.  Whatever- it’s breaded chicken, how can it be bad?!

I am going to follow a recipe I found online- just wanted to know what to use for the crust, since I bread chicken w/bread crumbs, and they don’t taste like nuggets do.  This recipe uses smashed cornflakes…we’ll see!

I took 1 lb. of boneless chicken breasts, and cut ’em into nugget-sized pieces.  Then, I mixed together 1 egg and a little bit of milk.  Next, I crushed up 3 ½ cups of cornflakes.

All ready to go!

I dipped the nuggets into the egg/milk mix, then tossed them into the cornflake crumbs- I put mine in a bowl, rather than mixing them in a bag bc during the crushing process, my bag had lots of holes!  Oh well…

Then, I arranged ’em on a cookie sheet (which I sprayed lightly w/olive oil cooking spray), and popped them into the oven at 400˚.  They should be in there for about 15 minutes.

I’ll check back w/a verdict once they’re finished! 😉


Yum, these are super-good!!  I probably should have crushed the cornflakes a bit more, bc the nuggets are kinda crunchy, but yum, they’re really good!

All done!


Even if the kids don’t like ’em, I’m certainly going to eat them! 🙂
