This is one of my favorite meals, and one that E loves, which is always nice!

It’s pretty simple, another nice thing, despite the fact that it takes about an hour to cook, once it’s fully assembled.

Anyway, I start out by sautéing chopped garlic- maybe for 2-3 minutes, and then I remove them from the pan.  Then, I add in shallots and green peppers- actually, this time, I used the peppers from our garden, and they were allegedly green peppers, but I think I’d left ’em too long bc they were half red.  Whatever- I chopped up one and tossed it in.

After a few minutes, I added a small amount of ground beef to the pan- I think about…a half pound or less?  Not too much, bc even though it’s meat sauce I’m making, it should still be sauce.

Then, the fun assembling begins:  a superthin layer of sauce (just so the noodles don’t burn on the bottom in the pan), then a layer of noodles:

Next, a layer of cheese- I used shredded mozzarella this time:

Then, a layer of the meat sauce:

Next, a layer of ricotta cheese, spread around:

Then, another layer of noodles.  I top the finished lasagna w/a little sprinkle of shredded cheese, parsley, and black pepper.

After that, I cover it w/foil, and pop it into the oven at 350˚ for about 30 minutes.  After that, I’ll remove the foil, and bake uncovered for another 15 minutes or so, until it looks done.
