I think this is one of the times that I’m SUPERhappy to have started this blog- and, for two reasons:  1) that I was given this recipe, and 2) that I am now competent enough in the kitchen after nearly a year’s worth of work to successfully pull it off!  If I hadn’t started this blog, I’m pretty sure I wouldn’t have really been trying too many new things, cheesecake included.

But,…I successfully made a cheesecake!!  I got the recipe from Sheryl, and I kinda thought that this was going to be another post of a baking fail, only bc of my inability to really bake.  Still, I really wanted to try it, so gave it a try tonight at my parent’s house- just seemed like something that’d be more fun to make w/a group effort!

Anyway, here’s the recipe:

The first step:  the crust.  Smells soooo good!  We started to think of loads of great uses for this mix- like, sprinkling it on ice cream.  (Yum).

Next, the actual cheesecake.  It’s funny- I never thought that cheesecake was good for you, but I just never realized how bad it was for you!  THREE packs of cream cheese?  Yikes! 😉

At this point, I was pretty sure that we’d only be messing up the yummy crust, bc I had a feeling that I would totally screw up the cake.  But, we went forward anyway:

Next, we put the cake into the oven…and then, we waited.

Even the boy wanted in on the action in the oven!

And then, it was ready!

We took it out of the oven, placed it on the cooling rack, and started drooling- it smelled amazing!

After cooling a bit, and cooling some more, it went into the fridge.  When it came out, we saw this:

Looks like a face!  So weird- and kinda funny, too!

Anyway, after dinner, we started chopping into Mr. Smiley:

Delicious!

Sheryl mentioned that it’s comparable to something at The Cheesecake Factory, and…she’s totally right!  This is one of the BEST cheesecakes I’ve ever had!  It’s amazing!  I’m still kinda in shock that I actually pulled this off- I was ready to call it a day after just making the crust!  It smelled so good, that I wanted to stop there before I ruined it w/my sad attempt at cheesecake, but…I’m happy that I finished it!
