Last night, I woke up at 1:30am, and…that was about it for sleeping.  I’ve been dealing w/pretty bad bouts of insomnia recently, but last night was definitely the worst!  We had just gone to bed at 11, so I had a whole 2- ½ hours of sleep…

But, on the up-side (if there is one!), I got some baking done that I had planned to do early before church, as we were signed up to bring breakfast for our Sunday school class.  So, instead of setting my alarm, and getting up early, I just stayed up and made banana bread at 4am! 😉

This is a recipe that my mom had used for years, and that I love- I probably use it once a week, maybe once every 2 weeks.  We always have bananas in the house, and there’s usually one banana that doesn’t make it too long, turns brown, and is then promptly tossed in a Ziploc and into the freezer.  This recipe uses up three bananas, and the more brown they are, the better.

Walnut Banana Bread

1-¼ c. flour                       1 t. baking soda         ½ t. salt            2 eggs

½ t. vanilla extract         1 c. sugar                     1 stick of butter (½ c.)

3 (brown) bananas         1 c. walnuts (optional)

–  Preheat oven to 350˚.

–  Mix together flour, baking soda, and salt; set aside.

–  In separate bowl, whisk eggs and vanilla extract; set aside.

–  In another bowl (this recipe uses lots of dishes!), mix sugar and butter;  beat until fluffy.

–  Pour egg mix into butter mix; then, pour all into flour mix.

–  Add in mashed bananas.  (I just mash ’em up w/a fork).

–  Fold in walnuts.

–  Oil pan; pour in batter.

(I used to pour all of the batter into a loaf pan, but it would turn into such a mess trying to get it to cook all the way through, and

not spill out of the pan.  So, I usually separate it between two loaf pans).

–  Cook  for 55 minutes.

(If you split it between two pans, cut the time to around 30 minutes).

It was a huge success this morning, and we came home w/no leftovers!  I didn’t take any pictures, bc…well, it’s banana bread, and who hasn’t seen that before?  🙂  But, I did swipe this picture from MyRecipes.com, just to make this post look nicer!
