This is one of our favorite meals, and I have our friend from New Orleans (well, who lived in New Orleans when we did, anyway!) to thank for introducing me to the lovely and amazing potsticker.  I really had never had them before going to dinner at their house once, and have loved them ever since.

Anyway, that’s what I made tonight- potstickers with chicken and LOADS of veggies.  This is a great meal because you can alter it each time you make it.  For instance, I usually use onions, green peppers, and celery, but tonight, i substituted the onions with shallots, and added mushrooms to the mix- mainly because Ezra wasn’t home, and wasn’t going to eat this!

This is one of the best (and easiest) things to prepare- and, it’s SO yummy!  Pics to follow- once I get the kids in bed!  (T-1 hr…)
